Chocolate Chip Lovers Cake

I love cake…There is nothing more delightful that a delectable, moist and fudgy chocolate cake.  Often, and especially after a good meal, I look at my husband and say “this is the perfect time for a slice of fudge cake.”  There is no other way to compliment a perfect meal.

To me, baking from scratch is my standard, but I often have my “cheats” along the way.  I believe that a cake mix is something that, if you amend it correctly, passes as baking from scratch.   Take a store-bought mix and combine it with pudding, sour cream and additional eggs.  Presto!, it tastes like you labored unceasingly to produce an awesome dessert.  Easy enough, and most items are already in your pantry.  However, this recipe includes three different flavors of chocolate chips.  Semi-sweet, milk and vanilla.  If you are like me I keep these goodies in the pantry as treats for the grandkids.  My husband also uses three chocolate chip flavors in his wonderful chocolate chip cookie recipe.  Chocolate chips are a staple in the Olson household and if one flavor is good…three are better.

When creating this cake, there is one crowning event that make this dessert a winner.  It comes as you frost this “fudgy goodness” with frosting made from candy bars.  Here is the post and recipe. I promise, this frosting is pure chocolate indulgence.  Everything it touches turns to lavishness, and soon you remember what it’s like to fall in love again.  You can apply this frosting when the cake is cool, or thin it down for the perfect drizzle icing.  However you use it, just don’t leave home without it…

Ingredients

Instructions
  1. Combine all ingredients into large mixing bowl (except chocolate chips). Blend together with an electric mixer ( I use my Kitchen Aid mixer). Blend together for 2 minutes, stopping often to scrape the sides of the bowl. Mixture will be thick. Pour batter into greased and floured bundt pan. Bake at 350 degrees for 45 to 50 minutes. Remove from oven and cool slightly. Invert cake to plate or cake stand and let cool before applying the frosting. After frosting the cake you may decorate with extra semi-sweet, milk and vanilla chocolate chips.
Recipe Notes

Please note that many of the chocolate chips will melt while cake is baking.  This only makes the cake more dense and "fudgier".
